DIETARY MANAGER

JOURDAIN/PERPICH EXTENDED CARE CENTER

OPEN: October 30, 2015

PRIMARY FUNCTION:

To assist in the planning, organizing, developing and directing the overall operation of the Dietary Department as directed by the Indian Health Service Food Service Supervisor and the Dietician to assure that quality food service is provided at all times. Reports to Administrator, full-time position w/benefits, salary; DOQ.

ESSENTIAL RESPONSIBILITIES AND DUTIES:

• Prepare food in accordance with current applicable federal, state and local standards, guidelines and regulations and the policies and procedures

• Work with the facilities Dietician as necessary and implement recommended changes as required

• Collaboratively develop and monitor adequate inventory control procedures

• Collaboratively verify invoices for the purchasing of food, supplies, and equipment Assure sufficient number of food service personnel are on duty at all times, during food service preparation so that meals are served on time

• Is responsible for production and timely service of meals

• Directs and supervises all dietary functions and personnel

• Hires, orients, trains, counsels, and disciplines dietary employees

• Schedules work hours and assignments also reviews and checks staff work performance

• Is responsible to see that each shift is properly staffed

• Develops job descriptions, cleaning schedules, and other dietary management tools

• Collaboratively assures that proper storage is available, and that handling of food and supplies complies with current guidelines

• Processes new diet orders and diet changes when received from nursing service, and keeps diet card updated

• Plans and assists in preparation and service of holiday and special meals and functions

• Maintain CONFIDENTIALITY of all pertinent resident care information and to assure patient rights are protected

• Performs other duties as assigned

EDUCATION/WORK EXPERIENCE/QUALIFICATIONS:

• GED/High School Diploma

• Must have a minimum of one-year dietary experience in a supervisory capacity

• Must have training in cost control, food management and diet therapy

• Graduate of Dietary Manager's Program, 2-yr, or 4-yr foodservice program

• Successful completion of Certified Dietary Manager exam

• Must be able to lift a minimum of 50 pounds

• Employment contingent upon successfully passing Pre-Employment Drug/Alcohol Test and Background Check

• Prior experience in healthcare foodservice preferred
