Traditional Foods Cooking Class held in Red Lake - P4

On Thursday, May 9, 2013, a Traditional Foods Cooking Class was held at the Round House in Little Rock.

Sponsored by Red Lake Traditional Foods, Chef Sean Sherman, who specializes in Native American foods, wild edibles, local foods and creative culinary adventure, presented the class with a full 3 course meal prepared with traditional ingredients found all around the Northern Minnesota area.

Chef Sherman is co-founder and owner of Black Sheep Chefs from the Minneapolis area. According to their website (www.blacksheepchefs.com) Black Sheep Chefs Catering was created in 2009 on the concept of bringing wild, healthy, local, creative, made from scratch foods to the local area. Their specialty is bringing back Native American Foods.

"The indigenous people of our area were fluent with local wild edibles for 1000s of years and we have been on the path to study and utilize these lost flavor profiles and put them into modern plate concepts," the website stated. "We believe wild foods to be extremely healthy and helping people re-educate themselves on the usage of natures gardens in their homes. We also strive to bring back the lost food culture of our Native American ancestors through a modern interpretation of their knowledge of wild indigenous plants and animals."

On the menu included the Starter Course, which was wild rice-walleye-cranberry cakes with pickled onion .; the Main Course of Juniper and pine braised venison with Sunchoke mash and wild ramps; and Desert, which was blueberry-maple-corn cakes with sweet hominy cream.

One had to be there to smell and totally experience these foods.
