POSITION OBJECTIVES:
Responsible for directing the business operations of all assigned operating departments within the F&B Division.
DUTIES AND RESPONSIBILITIES:
o Assumes responsibility and directly affects the financial responsibilities of the F&B department.
o Provides the direction to ensure effective tactical and strategic plans are implemented designed to maximize both short and long-term profitability of all F&B operations.
o Ability to analyze and develop cost factors in regards to food costs, budget and other financial components associated with the department.
o Develop menus, pricing, themes, and events for various food outlets. Recommend advertising strategies to increase revenues and sales. Maintain an awareness of competition.
o Develops and submits for approval annual departmental operating budget.
o Develops and submits for approval all capital project requests and justification assessments.
o Develops and implements work schedules, performance standards, plans and/or programs to ensure effective and efficient services are delivered by the department.
o Develop and maintain quality levels, performance and service standards to ensure exceptional quality, value, and presentation of all food and beverage products served to guests.
o Monitors and ensures expenses remain within operational projections or approves variances as may be necessary to ensure departmental services are maintained or enhanced.
o Creates and adjusts performance standards, measures and changes in procedures for increased efficiency, and internal/external guest service.
o Provides timely and accurate analysis of departmental related statistics, analytical reports, and related operating expenses that will ensure the department functions in an effective, efficient, and profitable manner.
o Actively observes individual or collective work progress; seeks, collects and reviews performance information with departmental team members.
o Ensures required supplies are available for staff members to provide the necessary levels of guest or support services. Ensure that all F&B areas meet requirements of Safe Serve for the Board of Health and other governing agencies.
REQUIRED QUALIFICATIONS:
Culinary experience is required and Gaming experience is desired. Educational level usually associated with the attainment of a Bachelor's degree in Business Administration and/or Hospitality from a four-year college or university; or six to eight years' experience and/or training; or an equivalent combination of education and upper level management experience within specific area of responsibility.
