SCOPE OF POSITION

Under the general supervision of Food & Beverage Manager is responsible to oversee assigned kitchen operations of Seven Clans Casinos.

DUTIES AND RESPONSIBILITIES

Responsible to oversee activities of entire kitchen operations, including personnel to ensure efficiency and smooth operations.

Prepares work schedules to accommodate business needs, supervises, trains and assigns duties to personnel.

Responsible for inventory to ensure adequate supplies, food products, and materials are maintained on hand.

Responsible for routine maintenance on equipment and ensuring equipment remains in working order.

Inspects food and preparations to ensure quality standards and regulations are maintained.

Assists Food & Beverage Manager with the development of menus and recipes.

Responsible to ensure all applicable policies, rules and regulations are adhered to and maintained.

Analyzes and recognizes deficiencies or problem areas and provides solutions to achieve desired results.

Responsible for timely and accurate paperwork including: inventory sheets, requisition forms, waste/spoilage reports, call-in reports, evaluations, time sheets, etc.

REQUIRED QUALIFICATIONS

It is required the Sous Chef have at least a two year vocational degree with related experience.
